Short description
The fruit is de-stemmed into medium sized stainless steel fermentation vessels, temperature controlled and pumped over the skins twice a day for 5-7 days allowing for maximum extraction. The wine is then pressed off skins and into barrels for maturation where a natural secondary ferment will occur (MLF). The wine is then racked and returned to barrel for 20 to 24 months aging before blending and bottling.

o Color: Bright magenta red with impenetrable depth
o Nose: Perfumed bouquet showing red and dark berry fruits with hints of chocolate and cedar
o Palate: Lifted aromas of liquorice, chocolate, dark plums, and blackberries. Smooth tannin and balanced acidity lend themselves elegantly to the lingering black fruit and spice of this wine

Average vine age of 40 years. The red loam over quartz of the Western Ridge of the Barossa results in Shiraz of power and concentration.
