Harvest, vinification & ageing

The grapes are harvested at night to preserve the freshness of their primary aromas. The first tête de cuvée juices are then selected to be vinified at a controlled temperature without sulphur. The fermentation reveals all the complexity and secrets of our exceptional terroir.
